EXS format consisits of instruments and samples

The instruments generally have the extension .exs, they go in your 
sampler Instruments folder in the Logic app folder (earlier version) or 
in the User>Library>Application Support>Logic folder on Logic 7.

There will also be some .wav (or maybe .aif) files, that go anywhere on 
your drive.
