Some notes on turning extensions off, in addition to the list Barb posted:

AppleScriptLib - Logic Help needs this, it's safe to leave it on.

QuickTime* - Leave this on - Logic needs it to display plugin editors graphically.

Quicktime Powerplug - ditto

Plus: Move all the contents of the "Quicktime Extensions" sub-folder out
into the main Extensions folder - then you can use Extensions Manager to
turn 'em all off EXCEPT "Quicktime Image" - then  "Quicktime Streaming"
won't throw an error at startup due to Open Transport not running...

You can also safely turn off:

	-Shared Library Manager
	-Shared Library Manager PPC
	-SOM Objects for MacOS

The scheme being that Logic doesn't actually need ANY extensions or
control panels running, apart from those required by your sound/video
hardware, and any required by your particular Apple hardware (ie 
Altivec, USB, Firewire etc).

So by way of example, here's my ultra-minimum set for working with Mac
AV, Digidesign direct i/o, and Logic...

- Energy Saver (set to never sleep the drives)
- ixView control (controls for my primary video card)
- Sound

Extensions:

- Apple Audio Extension
- Apple CD/DVD driver
- Apple Guide
- ApplescriptLib

- ATI driver update
- ATI graphics accelerator
- ATI MPP manager
- ATI resource manager (drivers for my 2nd video card, an old ATI)

- Digisystem init (for the digidesign AMIII audio card)
- Foreign file access (to read audio CDs)
- G3/G4 cache profiler init (cache enabler for my G3 accelerator card)

- ix3D driver update
- ix3D video memory manager (drivers for my primary video card)

- Quicktime
- Quicktime Powerplug
- Quicktime Image

- Sound Manager

That's it. Doesn't allow for 3rd-party softsynths, rewire, OMS, etc.
I've found the best way to set up a minimal set for Logic is to turn
EVERYTHING off except really basic video/audio, see what stops  working
properly and/or complains about missing bits, then turn things back on
one-by-one until everything is functioning correctly (duplicate your
standard, working set in the Extensions Manager  first, so you don't
mess it up irretrievably).

This is on a Umax S900 clone running MacOS 9.0.4. Note if you use USB,
Firewire, a G4 or G4MP, you'll probably need some USB, Firewire, Altivec
extensions etc turned on as well.
