I don't have my EXS24 yet so I can't test this, but theoretically yes.

I occasionally use a transformer to change the controller number of the
foot pedal plugged into my KX88 from CC04 to something else, and it
works perfectly for MIDI instruments. AFAIK it's supposed to work
exactly the same way for virtual instruments.
