The crashing problems I encountered were resolved by giving more memory (e.g. 256 MB) to the program. There were some other problems, but the Chicken Systems people have been very responsive and have released several updates at no extra charge, and most problems have been fixed, as far as I can tell. They just recently released the preliminary Mac version, and it is still a "work in progress," with many features not yet implemented but planned for the near future. So don't give up on it yet. As for documentation, I'm not sure what you need, because it's been quite easy to use without even looking at a manual. That said, maybe CDExtract is also worth looking at.
