Here's an email that I received from Hans Adamson about this very question. 
It worked flawlessly for me (I'm also on Mac):

Hi Ned,

  If you don't have a PC, you can combine the two split files with a free 
Mac utility called Rosetta:

How to use Rosetta:

I have tested it on a Mac, and for some reason the Mac assigns the same
eight-character name to both files.

The two files are just raw split files of the originating .gig-file.

First copy MALMSJ~1.GI!   from Disk 2, and rename it to MALMSJ~2.GI!
When you have renamed this file, copy also MALMSJ~1.GI!  from Disk 1.
Now you have file #1 and #2 named so you know which is the first and which
is the second.

Open Rosetta.
Under "File" menu choose "Join".
Select "MALMSJ~1.GI", then select also "MALMSJ~2.GI" by holding down "Shift"
while you click on the file.
Disable any options for decoding by unchecking the appropriate box.
Click OK (maybe it says "join" or something similar)

A new window opens.  If necessary you can rearrange the order of the files
here.  "MALMSJ~1.GI" should be on top, and "MALMSJ~2.GI" below.
Name the new joined file: "Malmsjo Acoustic Grand.gig" (without quotation
marks)
Click OK (or "Join" or similar)
The Rosetta program should now start to make one single file out of the two
..gi!-files.

As I mentioned, the .gi!-files are raw split files of the original
..gig-file.  If there is a problem with the
joined file when importing to EXS24, make sure you are not using the letter
"\ufffd" in the file name.

You can also try and do the joining process again changing any options for
the  binary concatenation, to make sure nothing is added to the file.
