Gotta be a basic thing to some.

For example: triggering a snare drum sample each time the snare drum mic reaches a 
certain volume level. ( in post )

My best bet is that it would be similar to sidechaining, but that is still a little confusing to 
me.

Anyone?

You can use "audio to score" for full replacement if the snare drum  
signal is clean enough.
apTrigga and Drumagog are plugins which allow filtering and playing  
samples based on audio data.
