Is there such a thing as hihat mode on the EXS 24?

Yes there is.
Just select all your hi-hats, and assign them to a group (which you 
can call Hi-Hat). Now, set the group <Voices> parameter to 1 and each 
successive note will override the previous one = hi-hat mode.
