If you're using ESP AU in Logic, use the EXS instrument editor in Logics "Audio" (i think) menu.

That editor will only be there if you have the EXS24 -- not the EXSP24.

seriously though, i am no hacker, i wouldn't even know where to start! my EXS  instrument editor works fine, even though i don't have the EXS24. maybe i have sum kind of bug ( a benevolent bug ) ? in any case, its worth checking out if you haven't done so already.
