The mac utility does not allow these adjustments - if you want to mess with clusters you need a third party formatter such as FWB HDT. This utility was very popular with Avid types wanting to squeeze the most out of a scsi system a few years ago. However Apple's drivers and formatting have significantly improved over the years so there is not much to be gained from going this route now, at least under OS9. I don't know if this will change with OSX.
