You could try zapping the PRAM:

1. Shut down the computer.
2. Locate the following keys on the keyboard: Command, Option, P, and 
R.  You will need to hold these keys down simultaneously in step 4.
3. Turn on the computer.
4. Press and hold the Command-Option-P-R keys.  You must press this key 
combination before the gray screen appears.
5. Hold the keys down until the computer restarts and you hear the 
startup sound for the second time.
6. Release the keys.

Further down the page it says that the PRAM stores the Monitor Depth, 
but there's no mention of resolution.
I guess it's worth a try? I did the same thing myself once (only under 
X) and I ended up using a second monitor, as I was fortunate in having 
one around. I guess a last resort would be to power down, and remove 
the internal battery for a few minutes. I've no idea if this would work 
becaaue I'm not sure where or how the monitor resolution is stored. As 
you've already tried removing the prefs, I guess stuff like this is 
worth a go?
