I have found the LAME encoder to be the best-sounding encoder.  There are a ton of apps that use this encoder, I use WinLame for Windows; a quick search turned up DropMP3 for the Mac at:

I can't vouch for this particular app, but I can vouch for LAME.

I use Mac's too.
iTunes works great for me- its free and part of the OS now.

On PC I use Music match and it seems fine.

This moves the raw source file on disk only. The archive index is not changed automatically, so you still need to run a manual refresh afterward.
