could someone be kind enough to point me to some tutorials, or
examples of interrupt based code for the eclipse development environment?

There is a tutorial on eclipse, search the last 3 weeks in this group.

But since it is make-based you might take any example and convert it.

I don't know if you are using the CDT plugin, but you might want to
check out Zylin.com and their opensource section :o)
