A 'CV-Pedal' is any pedal that outputs a voltage that you can then use to control a module. CV = COntrol Voltage. For example, stepping on a pedal connected to the 850 creates a voltage sweep that you can connect to the frequency input of a filter for your wah-wah effect. Connect it to a VCA for volume pedal effects, or to your VCA for wild pitch bend effects (or not so wild: you can scale the voltage out of the 850 for more subtle effects).
