after Mark has now explained the hardware side I want to add:

If you're using PC & STEEM your PC's soundcard might have already a 
MIDI interface in the joystick port. With the appropriate 
cable/adapter you can go MIDI there. 

It would be easier for us to answer you if we knew what kind of 
computer & software you're using.

Concerning the software side, assuming you do it the Atari (or STEEM) 
way, the software I could recommend is GenPatch ST. It has already 
configurations set up for the TX81Z.
