Unfortunately I don't have a manual myself (It would be nice if someone
would scanning and uploading his manual), since I bought the VZ-1 used about
1 1/2 year ago myself...

Sysex will not help much, since as far as I know you always have to send the
whole patch for changes of a single parameter.
It is possible to globaly define destinations for some controllers like weel
1+2, foot vr, aftertouch, pitch bend... especially controlling the envelope
bias can be quite similar to control a filter... and it's "realtime" (
unfortunately with some latency)....
