Show him the channel mixer set on monochrome and how the channels influence the conversion. Each color image could ask for another color channels setting. Be aware that image editing on color definitions can enhance the B&W in the end what image editing on the B&W file might not achieve afterwards. The process to B&W can be done in RAW developer too.
