Digital BW, The Print

First of all I´m astonished by this groups vitality and nice spirit .

I´m learning quite a lot here while trying to figure out what setup 
would be best for my printing needs .

I`m  a commercial / editorial photographer with digital experience
stretched to custom profiling regular Epson printers .

I think what I need is a MIS Variable inkset ,
but I´m not sure which of my spare printers will work 
best for the BW conversion - 1200 or EX ?

Next question is about Continuos inkflow cartridges .
Is it a way to go  ? 
Should I buy everything from MIS , or should I shop cartridge 
piping and stuff somewhere else ?

Is there som big disadvantage of starting the whole thing 
with   4 OZ bottles  ?
