iProof PowerRIP will let you print combinations of color and BW. http://www.iproofsystems.com/powerrip_2000_epson.htm This little known RIP was the first I used to get neutral BW without metamerism from my 2100. It doesn't have a separate BW printing mode, but it seems to do the right thing and use mostly grayscale inks when it encounters grayscale values in RGB images. Some people here tried it and found the dithering too coarse, while others liked it. It is slow because it requires you to use 2880dpi printing mode to get acceptable results. I also found that the dmax with this RIP was lower than with the Epson driver. I've since moved on to the UT7 inkset using both the Epson drivers and QTR.
