Digital BW, The Print

I am interested in getting into black and white printing and I have 
an epson 875DC printer that is "spare". Is this an easy unit to 
convert to balck and white?
Also, I am not sure where to begin with getting inks/cartridges.
I have checked out the offerings on the MIS associates pages, but am 
not sure what "system" to start with...
Should I get Quadtones or Ultratones? Variable mix or Full spectrum?
If I understand correctly, I can use UT2 inks designed for the 890.
