Andy,

IJC/OPM now supports the R200 and will give you what you are asking 
for using the Epson UC inks.  Their website has not yet been updated 
to show R200 support, but the latest release for Windows, v1.0.3, 
does support this printer.  

Unless you are happy with BO printing (black only, using just the 
black cartridge on your UC inkset) you will have a hard time getting 
good prints without a dedicated B&W program (like IJC/OPM, QTR, or 
ImagePrint).  The Epson driver doesn't do a good job with the 
standard inkset when outputting B&W.  The other alternative is to buy 
a quad inkset and use it with Paul Roark's curves, if the R200 is 
supported.
