It doesn't mean its done via the desaturate command, it can be done via any and all of the special tools, methods, and plugins for conversion. Some give you a three channel neutral result, some give you a one channel neutral result, that you can bump back up to three channels if your workflow starts from an RGB instead of a grayscale file. Printing from AWB means losing all preview, and all tinting tools except the AWB dartboard, and doesn't allow for crosstinting.
