Digital BW, The Print

Hi all,

I have decided to venture into the world of digital as I am a new dad 
and need to get pictures out fast to the grandparents.  

But, in the past, my standard setup was a film darkroom.  I'm used 
good old Tri-X, Rhodenol, and Oriental FB paper.  

Currently, I have a Canon Powershot A95, Gimp on Mac OSX, and an
Epson 
RX500 as my availible digital equipment.

What would be a good first step for me to print out similar quality 
B+W's with my digital setup?
