Hi,
I am planning to print a 2m mural on my Epson 2100.

Obviously it will use up a lot of ink - if ink runs out half-way through, is it possible to change a cartridge in mid-print and keep on printing?

Yes, or so I have read from various sources.  It continues after change
without any noticeable effect.  Only problem I heard of is someone
improperly pressing the feed button instead of the ink button, which, of
course, ejected the print.  I printed a dark sunrise panorama of similar
length and concern; the ink use was not that bad.

Yes, I've done this before and it works without problems. Obviously you
don't have a chance to check if the new cartridges give you perfect nozzle
checks before it continues to print, but with original Epson cartridges
that's almost never an issue.
