I am thinking about moving to a Mac for my digital photography. My question is whether I will be able to work on the TIFF files that I created with an Epson Scanner & Photoshop on a PC on my new Mac?

For what I know TIFF files are platform independent so you'd be able to open your Windows generated TIFF files with a Mac and Photoshop too. The answer is yes, you can work with your TIFF files. Pablo is right....try it out first, but there really shouldn't be any problem.
