iTunes does convert to MP3,
they moved it around on us
go to
iTunes>Preferences>General tab,
Towards the bottom is says "When you insert a CD..." next to that  
there is an "Import Settings button,
Click that and choose your MP3 resolution you want,
press OK
then back on the advanced tab you'll see "create MP3 version", if you  
want AAC
(Advanced Audio Codec)
follow the previous steps and switch import settings to your flavor of  
AAC
