How do you go about transcribing?

i would suggest that you ask that they play to a click track, drum loop, or 
metronome, and tune to standard pitch. 

It seems that once you have gone to the trouble of transcribing the song, you 
could also give them a midi file of their song which they could import into 
logic, to make a fuller arrangement.
