Hi Buzzard,

Theremins seem to have a "break in" time -- I think some of the  
components (capacitors and such) kind of settle in after the unit has  
been run for a few weeks.  When I first built my Theremax, I had to  
tweak the coils just about every day for the first few weeks.  Then  
things kind of settled in and I hardly ever have to touch them now.

I'm assuming you have a Standard Etherwave.  Kip Rosser posted a  
procedure for calibrating the Etherwave Standard:
