I'm still sort of a newbie on P3-use, but I think I might know the answers to your questions. 1. The reason you don't hear anything is indeed that there are no gates set. Keep the Play/edit button pressed, and press the first track button. You will now see that all the lights of the parts/tracks are out. Press some knobs, be sure to press RUN, and voila. 2. Changing MIDI channels. Keep the F-button below the MIDI-channel option pressed and press the track/part number you want it to be set on. Oh, and RTFM! hehehehe.....
