I'm primarly a user of Ableton Live. Any VST capabable plugin
parameter can be midi learned. It's as simple as turning on Midi Learn
in Ableton, selecting the parameter you wish to be controlled, and
then tweak the knob, slider, button on your controller.

I used to use Cubase SX2 and it had a similar feature, so find out in
your Cubase manual how to do midi learn on the parameter and tweak
your knob.

Most VSTis do not send midi out from my experience, so doing the learn
in reverse is not likely to work for you.
