If I were to reverse the opamp inputs, could I achieve a negative
going gate ? (i.e.: connect the gate to the - input of opamp instead
of + input)

If you swap the opamp inputs, the output would be a +ve normally and fall
briefly to 0V when the gate signal arrived.
The result is a negative going trigger pulse. The pulse voltage never goes
below 0 volts though, so if that is what you mean, yes.
