Yes, its possible to profile the Piezo inks via PFP or S3Print and the 
Epson driver. I have some truely stunning prints that were done this 
way.

What's the workflow? I mean, should I print and read the color target
the same way I do for color calibration or should I use a different
target?

I'd suggest just reading the 225 patch color target and building a 
profile from it. Feel free to experiment with adding the extended grays 
target as well. You would simply print through your resulting profile 
the same way you printed your target.
