sit down and do some math.  at a rate of 31.25Khz, the amount of delay 
between one note and the next will be very very very low.  The only time 
you run into issues is if you are running everything on a single 
out-thru-in chain (which not many people do) or are pounding out LOTS of 
controller data.

In either case, ive been using midi heavily for more about 15 years now 
and, with the exception of instances where the cables were bad or I was 
breaking one of the rules above, have never had a problem with latency.

its amazing, in this modern age, just how far our heads get up our own 
asses worrying about non issues more than we make music.
