The Sampler Instruments folder itself can be an alias, or any file or
folder therein can be an alias. So you could have a folder "Sampler
Instruments" on some other hard disk, and put an alias to that in the
Logic application folder (instead of a real "Sampler Instruments"
folder). Or you could have folders like "EXS factory", "Xtreme
Analog", etc, on some other hard disk, all containing EXS
instruments, and you can then put aliasses to these folders in the
Sampler Instruments Folder which is in the Logic application folder.

To quickly create an alias: in the Finder press Command-Option, and
then drag the file or folder to the new destination: instead of
moving the file, you'll create an alias.

I don't see why you would want to use aliasses though.
EXS-instrument files are relatively small, so you might as well
simply put them in the Sampler Instruments folder directly. The
samples themselves can go anywhere, like on a fast & big dedicated
audio-drive.
