I'm not an expert with Logic but to import Akai CDs your must put the 
CD-Rom in your CD drive and on the EXS control panel click "options" 
and you will get a pop up list for importing Akai, Soundfont, 
Samplecell, and Giga formats.  When you click on Akai a new window 
pops up showing the banks on your CD.  You can either click the banks 
you want to import or at the bottom there is a button for Convert 
entire CD.  

The Program names for the samples will be stores in the Logic 
5/Sampler Instruments folder and you can re-sort this any way you 
want.  The audio files will be placed in your Logic 5/Akai Samples 
folder.
