Funny how everyone advices to use some other software, and no-one 
really answers the question :).  The answer is: yes, it can be done. 
What you can infer from the other posts though is that it's not too 
easy.  When you load an audio file in the EXS, you can set the 
sample's start and end point (in samples).  Obviously this allows you 
to set e.g. start=0 / end=44100, and start=44100 / end=88200 for two 
different zones that use the same sample.  It's equally obvious that 
this becomes quite cumbersome if you want to use 20 sections in 30 
different audio files (requiring to set start/end on 600 sections by 
hand).

For just a few zones it's not all that bad thgough: you can import 
the sample in the EXS, click the 'edit start/end' button which will 
open the sample in Logic's Sample Editor, and there you can 
graphically drag start and end markers around.  When you're done, 
close the Sample Editor, and the EXS will use the start/end values 
you've just set.
