In the main EXS interface, just pick a soundfont-file as if it was a normal EXS-instrument (i.e. click-hold on the big black field between the Edit and Option buttons). If you do, the EXS should automatically start converting the soundfont. Samples extracted from the soundfont will be put in the "SoundFont Samples" folder inside the Logic application folder and can, if you want, be moved to a dedicated audio drive afterwards.
