What am I doing wrong? Nothing. That's a limitation of Logic, you can only play one virtual instrument in realtime. There's a nice workaround though (better don't ask why they didn't incorporate that into Logic straight allready). Do the same as you described (the channel splitter job that is). Now insert an I/O plugin on each but the first cabled EXS instance (as that one would be playable in realtime anyways), setup any I/O there and then bypass the plugin. Halfway technical explanation: By inserting an I/O plugin Logic would assume that your track is a "live" track, so it would reduce the buffer size to your latency's amount and "activate" it.
