Yes, it will.
The only downside is that when previewing files they will playback at the
samplerate you set in Logic, so they might seem out of pitch - but once you
load them into the EXS, everything will be fine.

I wouldn't do so, but that might be a matter of personal preference - and a
matter of filesize perhaps too. In case the EXS is set to stream samples
(via VSM) it'll have to do the conversions on the fly, no idea whether
that'll slow things down in a noticeable way, personally I've never been
running into troubles.

After all, 44.1 is by far the most common samplerate used by any sampler
patches.
That's also why it will take a long time until I bother to work at anything
but 44.1 as my Logic/soundcard samplerate.
