Not so, Brian. You just have to go back to the control page of EXS and 
choose the last instrument in your list. EXS temporarily gives it a 
number, say Instrument 3411 - choose it and you can play it and edit it 
like any other. When you're done editing, you'll be asked to save it 
and you can give it a better name.
