No. Nodes are only for Logic plug-in processing power.

Nope. And while Kontakt is an excellent sampler and I both use and 
have no desire to dis it, you will be able to run more EXS on one 
machine.

EXS works really well, and it's very efficient. I personally think it 
makes the most sense for a Logic user to go with EXS as much as 
possible, simply because of the integration. If you're running OEM NI 
libraries, no problem, but given a choice I'd definitely go with EXS.

Depending on the VSL instruments - i.e. Performance Legatos have many 
more samples than simple short note programs - you should be able to 
load 50 or more tracks.

...which of course is a good thing, because it means the samples are long.

I've heard that Logic 7.1 isn't 64-bit enabled yet, but I'll find out 
as soon as Tiger arrives here.
