The EXS convertor is probably doing a good thing. There's two definitions of "stereo." One is "dual miked guitar with care to eliminate phase issues, etc." and the other is "boy, this sample sounds wide!!" Many times, especially with the latter, "stereo" files have different loop points for both sides, different start times, other differences. In those cases it is not a good idea to make a single interleaved stereo .wav or AIFF file, because then those setting would be shared. In those cases, it looks like the EXS convertor is making a decision to leave it as dual mono, because somethign didn't match.
