Another reason is to create velocity switching. If you have a set of samples with 3 or 4 levels of loudness for each note or drum -- just assign all the pp samples to one group, all the ff samples to another and so on. Then when you want to program in the velocity switching, do it in the groups so that group pp only responds to notes with a velocity between 00 and 40 say. This saves and incredible amout of time (imagine setting velocity levels for every single sample in a large piano sample set) and also if later on you want to change the response or scaling of the instrument it is very easy to edit the velocity zones of the groups.
