Sorry to jump in ...
I think this is what the Project Manager in Logic 6 is designed to 
do....
if you rename a sample it should update all EXS sampler 
instruments that use that sample.
If you rename a  sampler instrument it should update all songs  
that use that Instrument..
I know  for sure that it works with Logic Songs and their related 
audio files.
I'll have to test  renaming EXS instruments in the Project 
Manager
