Joshua,
Traditionally, synthesizers and samplers offer ADSR (and variations of)
enveloppes. This limits you to 4 settings to define how a given patch
evolves in terms of volume (amplitude), colour (filter), pitch (frequency),
etc. Breakpoint enveloppes can have anywhere from 8 to 16 to XXX
points/settings that you can change. This makes for a much more dynamic,
natural contour. You can find examples of this type of enveloppe in
softsamplers/synths like Kontakt, Absynth, Crystal, etc.
