In the editor, each layer is a group (not necessary, but handy). In one group you set the Select Range parameter to "0 - 63" and in the other you set it to "64 - 127". Save the instrument and close the editor. Back in the EXS, in the modulation matrix, you set Dest = Sample Select and Src = Velocity. Now velocities 0-63 will play the one layer, and velocities 64-127 will play the other. Since the transition from one layer to the next is abrupt, you can choose to dial in a certain amount of crossfading (in the upper left corner of the EXS: amount & type). With acoustic instruments this won't work very well, as you'll get the effect of doubled notes (plus flanging and what not) in the xfade zone, but with various layered synthetic sounds this can work out very well. If instead of Velocity you picked e.g. Controller 1 as Source, you could use your modwheel to 'scroll' through the layers. If you have multiple layers with sustained samples, and dial in enough crossfading, you can do some pretty wild realtime sound-morphing this way. So basically the Sample Select destination is what works in cooperation with the 'Select Range' in the EXS editor.
