Try it when you have several articulations up! Yes, sequencing well
is a lot of work.

That's the way to do it most of the time, but you can also create
keyswitching programs in the EXS and switch between the two sounds
that way. Basically, you open up the editors, copy all the
groups/layers from the source instrument, and paste them into a new
layer on the target instrument. Then choose keyswitch as the way you
switch between them (I forget the language, but it should be
self-explanatory).
You don't have to stop at two instruments, of course; a friend of
mine sets up two groups of keyswitching instruments, one with the mod
wheel down and the other with it up. There's a point where it becomes
unwieldy, but sometimes it's easier to do this way than having a lot
of tracks.
