Is there any way in the EXS to have it play the loop while I'm holding the
key down then play to the end of the audio file when I release the key?

Isn't that a job for a squencer?
Look for "Touch tracks" in the Logic manual, they do exactly what you 
want.

I guess he was talking about looppoints embedded in samples (or inside the
EXS patch for that matter).
The answer to this sadly is no, because the EXS doesn't support "release
loops" or "release samples" - pretty bad for a modern sampler, especially
since one could build up either way more naturally sounding patches
(example: the small buzz happening when you release some bass/guitar string)
or some weird stuff.
Kontakt for instance (and my guess would be a lot of other soft samplers as
well) has some "loop until release" feature.
A workaround (but a highly timeconsuming one) could be to load the release
part of the sample into some other zones which could then be triggered by
note offs. But as said, I wouldn't bother with that method as it's surely
one of the more timeconsuming things I could think of.
That (and being compatible to other platforms and hosts of course) was one
of the reasons for me to buy Komplete 2 (including Kontakt) a while ago.
It's just so much easier to do these things in Kontakt.

I think you misunderstand my question. I want the sample to loop while I
hold the key down and then play to the end of the sample when I release the
key.

Imagine a harpsichord sample. I want it to loop until I release the key and
then it should play the part at the end of the audio file where the quill
drops back onto the string. It¹s a common feature in Emu and Akai samplers,

The missing loop options in EXS are a bad joke. IMHO, we will never get 
the fwd-reverse, loop at release, etc, options that could be found in 
samplers 15 years ago...

This is called "LOOP+RELEASE" at least in my parlance.

When the keyoff occurs, the data keeps going until it hits the loop end, 
but at that time it does not loop but proceeds to the data end.

No, the EXS doesn't have it but there are ways you can simulate it.

(sample 1, looped)   (sample 2, unlooped)

ST        LOOP   KYOF                 DATA END

You do this by assigning a release trigger (NOTE OFF in a group). The 
drawback is that this is not as seamless as the feature is supposed to be, 
however, you can get close.

I agree that this is a serious missing feature.

I have started a thread at Apple's forum to see if the powers that be 
take any notice. Please add your voice to this thread (you'll have to 
join if you're not already signed on) - consider it a petition to 
Apple.

That's what happens when you set a loop in a sample. No intervention 
is necessary.

Probably a stupid question (sorry of that) : can you give details there 
: I d'ont see any "Note off" in the zone or groups in the EXS 24 
Instrument editor.
Although I have to think of the time it certainly needs, I'm really 
interested in this possibility for some jobs I have to finish.

Oh yes ! I would have had a look there, but I completely forgot there 
are parameters that can be hidden there ! Although I often use the 
EXS24 I don't often use the group feature, and I had'nt been so deep in 
the soft in fact : no time enough for experimentations, and I'm 
acoustic musician : my job usual would be to play pipes and bouzouki

The Post Harpsichord for EXS is programmed to do just that with the
EXS Key relaese trigger in group as mentioned previously.

I miss the ease of the old S1000 loop until release feature for this
kind of thing, except that these days with so much RAM the need for
looping is now more or less obsolete. I'd rather have a harpsichord
with natural unlooped sustain/decay.

There is an advantage to this method over loop until release:

You can easily control the level of the release sample relative to the
actual sample using volume in the group, you can't do this with loop
till release.

At least I don't think you can.

You can also have the release samples on a different EXS instrument
cabled to the original one for even more flexibility

That won't help with the release part of the sample at all. You'd need extra
zones for it. In Kontakt, no matter whether the sample per se is looped or
not, you can define a portion of it to become the release part.
And btw, I love looped samples for the weird things you can do with them.
Raise the attack, sustain and release of your harpsi and there goes your
harpsipad. Impossible with unlooped samples.
