All EXS instrument (the *.exs files -- sample maps, as you call them)
are supposed to be in the Sampler Instruments folder which resides in
the Logic application folder. You can of course also put an alias to
some other folder (which contains .exs files) in the Sampler
Instruments folder.
The samples themselves can be anywhere on your harddisk -- upon first
loading an instrument, Logic will search all connected drives to
locate the files. When found, it will then write their location in
the .exs file, so that next time you load the instruments, the
load-time will be substantially shorter.
Logic uses its own scheme of folders when converting sample libraries
and such -- samples from AKAI disks are put in a folder called 'Akai
samples', converted Soundfonts are stored in a Soundfonts folder,
etc. You're free to move those around though, or merge all those
folders into one. Just make sure the .exs files remain in the Sampler
Instruments folder -- that's the only thing to care about.
