The one caveat that I find expensive, quality, high-end gear really affords is time. I basically agree with you. I can get great sounds with a tin can and a piece of string... but it takes a lot longer and your options are limited. With a great signal chain and a great instrument, I find that I usually get a great sound sticking the mic in front of the instrument with minimal fuss.
