I like to quantize velocities etc too. As for synths, for those trancy arp lines, I tend to program the synth this way that velocity changes the crossmodulation/frequency modulation. I then play a rhythm with it e.g. and afterwards pencil all the 16ths between my rhythm (sometimes one octave lower e.g.) and then I lower the velocity of those pencilled notes: this gives you a nice arp with accents in FM etc. Works very well.
